Speck in Italy is smoked proscuitto, robust and usally sliced very thinly. Made in Trentino-Alto Adige the pig thighs are smoked, dry salted and aged for 5-6 months to give it a very distinct flavour.

We use it in one of our more popular sandwiches with Beauvale cheese and our pear chutney.
